Meet the chef creating 700 dishes a year

Macao's largest spa, world-renowned brands and luxuriously appointed rooms and suites make up the guest experience at Wynn Palace, however its culinary credentials are truly mouthwatering. Located in Cotai, Wynn Palace is the second luxury integrated resort by Wynn Resorts Macau, along with Wynn Macau. Their philosophy of bringing the best to guests every day is something that one of their fine-dining superstars is particularly passionate about.

Tam Kwok Fung's culinary career could be traced back to when he was around 12 years old, exploring this family's kitchen and beginning to perfect simple dishes such as frying an egg. Fast forward to today and Chef Tam is world-renowned, crafting more than 700 dishes a year at his Michelin-starred restaurant, Chef Tam's Seasons. It is also the only restaurant in Macao to be ranked on Asia's 50 Best Restaurants 2024. Accolades aside though, Chef Tam still draws on his childhood experiences and heritage for inspiration. His extensive fortnightly menu is based on 24 solar terms of the Chinese lunar calendar and is crafted with seasonal ingredients from around the world.
