Crispy-topped chicken tikka pie

When you want something super comforting, but don't have the headspace for complicated cooking, this deliciously creamy, spicy chicken tikka pie is just the job. A sheet of ready rolled pastry is cut into squares and casually arranged on top, which looks great and gives plenty of crispy edges to enjoy.
For this recipe you will need a fairly shallow ovenproof dish.

Ingredients
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 1 small leek, thinly sliced
- 1 carrot, thinly sliced
- 2 chicken breasts, chopped
- 1 tsp ginger and garlic paste
- 1 green chilli, sliced
- 1 tsp Kashmiri chilli powder
- ½ tsp ground coriander
- ¼ tsp turmeric
- 1 tsp garam masala
- 85g/3oz tinned chopped tomatoes
- 1 chicken stock pot
- 1 tbsp plain flour
- 120ml/4fl oz double cream
- handful fresh coriander, chopped
- ½ tsp pepper
- salt, to taste
- 1 sheet ready-rolled puff pastry
- 1 tbsp milk
Method
Preheat the oven to 200C/180C Fan/Gas 6.
Heat the oil in a large frying pan and fry the onion, leek and carrot for 3–4 minutes until softened.
Add the chicken and fry for 3–4 minutes, then add the ginger and garlic paste, green chilli, Kashmiri chilli powder, ground coriander, turmeric and garam masala and fry until fragrant, stirring well.
Add the tomatoes, chicken stock pot and a splash of water. Cover and cook for 3–4 minutes.
Stir in the flour, then add the cream and coriander, you should have a thick and creamy consistency. Season with the pepper and salt. Adjust the consistency if needed, if too thick add a splash of water, if too thin cook for a little longer.
Transfer the filling to an ovenproof dish and set aside to cool a little.
Cut the pastry into 5cm/2in squares. Lay the pastry squares, overlapping slightly, on top of the pie filling. Brush the pastry with the milk.
Bake for 20–25 minutes, or until the pastry is golden-brown and crisp. Serve with your favourite vegetables and spicy potatoes.
