Sheree's apple pastries

Ingredients

  • 4 apples

  • 1 tbsp unsalted butter

  • 270g light brown sugar

  • 11/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp ginger

  • 1 tbsp flour

  • 1 tsp of vanilla extract

  • 1 tablespoon lemon juice

  • 2 sheets puff pastry

  • 1 egg (whisked)

For the icing:

  • 100g icing sugar

  • 1 tablespoon maple syrup

  • 1 tablespoon milk

  • 1 teaspoon vanilla extract

  • Pinch of salt

Method:

  • Preheat oven to 200°C

  • Melt butter in a pan, add the chopped apples and cook until tender (about 7 minutes)

  • Gradually add brown sugar, cinnamon, nutmeg, ginger, vanilla extract, flour and lemon

  • Slice puff pastry sheets into 6 rectangles each

  • Add half to lined baking tray and top with cooked apples

  • Brush edges with whisked egg, then top with remaining 6 slices of pastry

  • Seal together with fork and brush with egg wash

  • Cook for 20 mins or until pastry is golden

  • Whisk together icing ingredients until smooth, then microwave to warm it up which will thin out the glaze and help it harden

  • Remove pastries from oven and allow to cool slightly before drizzling icing
